Tapulone of Boca - recipe
INGREDIENTS : per 6 people

An abbundant glass of aged red wine Boca D.O.C. , 1 onion finely chopped, 1,2 kg of meat of donkey finely chopped, 3 crushed garlic cloves, 3 leaves of laurel, 4 spoons of olive oil, 40 g of lard ground, pepper, nutmeg, salt

PREPARATION: In the oil and lard is lightly fry the onion and mashed garlic. When interim is well browned, put the minced meat with a pallet of wood. let the water of the meat dry, then add a good glass of Boca aged wine, salt, pepper and walnut. Cook for 15 minutes in slow fire and everything is ready. Be careful not to remain too dry, otherwise, add a bit of broth. As a side dish is good a delicious polenta or pastes porcini mushrooms
