“La venemmia” - recipe
This dish was generally consumed in the vineyards during the time of the harvest. Ingredients for 4 people:


7/8 potatoes, 2/3 anchovies, 2/3 of tomato concentrate, a pinch of salt, lard or butter.

Boil the potatoes, peel and cut in small pieces. Then put them in a frying pan with a little butter or lard, salting them and cook them very well by mixing in continuation. Then add the preserves and anchovies cleaned and chopped up: leave to cook in a live fire till when it will form the rind.
